Low Carb Garlic Chicken
Ingredients (makes 6 servings)
3lbs of chicken
3 tbsp olive oil
7 ½ – 15 cloves garlic, sliced
1 ½ lemons (just juice)
¾ cup fresh parsley, finely chopped
6 tbsp butter (do not use margarine)
Preheat oven to 450 degrees F. Place chicken in a butter greased baking pan. Salt and pepper generously. Sprinkle the garlic and parsley over the chicken, and drizzle lemon juice and olive oil over the top.
Bake chicken until golden and the garlic slices have turned brown and roasted, about 30-40 minutes.
Lower the temp towards the end to avoid drying out the chicken.
Cauliflower Pizza with Artichokes
Ingredients (makes 1 pizza)
4 ¼ ounces shredded cheese
4 ¼ ounces grated cauliflower
½ tsp salt
2 tbsp tomato sauce
2 ounces shredded cheese
1 tbsp dried oregano or basil
2 ounces whole milk mozzarella cheese
2 ounces canned artichokes, cut into wedges
1 garlic clove, thinly sliced
Preheat oven to 350 degrees F. Grate the cauliflower in a food processor or grater. Place in bowl, add shredded cheese and eggs and mix well.
Spread out thinly on a baking sheet lined with parchment paper, using a spatula. Bake for about 20 minutes or until it has turned color slightly, no more.
Remove from oven. Spread tomato sauce and add the cheese on top. Top with artichokes and garlic. Sprinkle oregano/basil on top.
Raise the temperature of the oven to 420 degrees F and bake pizza for 5-10 minutes more.
